The olive varieties used are Peranzana, Ortice, and Ravece. Its herbal olive fruitiness and harmonious bitter and spicy flavours make it suitable for finishing dishes that don’t require cooking including seafood, carpaccio, mozzarella and salads. The batches of oil produced are certified before bottling by the accreditor CCPB in Bologna.
